I tried this recipe yesterday and it was a hit. I made one modification: I mixed some honey with the mustard before spreading it on the chicken.
We had it with carrot and potato mash and zucchini and peas.

Project lunch
DD1 has started primary school and DD2 has started preschool, which means eight packed lunches to prepare each week. I can forsee needing some inspiration as the year wears on, so for a while I will try to photograph their lunches to create a kind of lunchbox reference gallery.

Big batch meals to freeze
With baby coming, it would be a big help to stock the freezer with some easy meals. DH has a few weeks off and has expressed some interest in making it happen. (I had great intentions of doing it myself in the last few months, but it proved too much on top of the usual weekly routine and late pregnancy).
These are a few things that can be cooked in the pressure cooker (yay for pressure cookers!):

Lentil mix for lentil tacos
Chicken & mushroom risotto
Beef & bean chili

Some basic meals
These are some of the things we have regularly (some more frequently than others). These days we usually have microwaved veggies as well if the main is too veggie-light - lots of broccoli and carrot lately, because that's what the girls will eat. They also often won't eat broccoli with any kind of sauce on it, so we cook it seperately even if it could be included in the main.
I have probably missed a few things, but looking at the list highlights to me how limited our meals are. Must change that.
Tuna mornay with rice
Pasta Bolognese
Spaghetti/fettucine with meatballs
Lentil tacos
Chicken nuggets with chips (bought frozen) (kids' favourite meal)
Lasagne (bought)
Chicken and mushroom risotto
Chicken or beef stirfry with 'fresh' (shelf stable) noodles
Sausages with rice and steamed veggies
Vegetarian chili
Beef and bean chili
Home made pizza
Tuna casserole (pasta bake)
